Mexican Shrimp Cocktail

 

1/4 c. ketchup

1/4 c. lime juice

1 tsp. hot pepper sauce

1 lb. fresh shrimp, peeled, deveined, & cooked

1/2 c. chopped tomato

1/4 c. diced onion

1/2 c. snipped fresh cilantro leaves

2 avocados, seeded, peeled, & chopped

 

In a large bowl, stir together ketchup, lime juice, and hot pepper sauce. Add shrimp, tomatoes, onion, and cilantro. Toss to coat. Cover and chill for 2 to 4 hours. Just before serving, add avocados and toss to coat.

 

Garnish with lime wedges, if desired.
