Nacho Potatoes 1/2 c. sliced black olives, drained 1/2 bag (22-ounce) frozen waffle fries 16-oz. can refried black bean beans 1 c. shredded Mexican cheese blend 1/2 c. mild chunky salsa 1/2 c. sour cream Preheat oven to 400 degrees. Arrange potatoes in a single layer on a lightly greased baking sheet. Using oven mitts, place baking sheet in preheated oven. Bake for 18 to 20 minutes. While fries bake, put beans into a microwave-safe bowl. Cook on high power until warmed through. Set aside. To assemble, evenly space cooked potatoes on a microwave-safe plate. Top potatoes evenly with the beans, cheese, and olives. Cook, uncovered, on high power for 1 minute or until cheese is melted. Serve with salsa and sour cream.
