Banana Snack Cake 1/2 c. shortening 3/4 c. packed brown sugar 1/2 c. granulated sugar 2 eggs 1 c. mashed ripe banana (about 2-3 medium) 1 tsp. vanilla extract 2 c. all-purpose or whole wheat flour 1 tsp. baking soda 1 tsp. salt 1/2 c. buttermilk 1/2 c. chopped nuts Frosting: 1/2 c. packed brown sugar 1/4 c. butter 6 tbs. milk 2 1/2 – 3 c. confectioners’ sugar In a large bowl, cream together shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. In a separate bowl, combine flour, baking soda, and salt. Add to the creamed mixture, then add the buttermilk. Stir in nuts. Pour the batter into a greased 9x13x2-inch baking pan. Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. For frosting, combine brown sugar, butter, and milk in a saucepan. Bring to a boil over medium heat, then boil and stir for 2 minutes. Remove from heat and cool to lukewarm. Gradually beat in confectioners’ sugar until frosting reaches spreading consistency. Frost the cake. 12 servings
