Carrot Banana Bread

 

1/3 c. vegetable oil

1 c. sugar

2 eggs

2 c. all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. ground cinnamon

1 c. mashed ripe bananas

1 c. grated carrots

1/2 c. chopped pecans

 

In a medium bowl, combine oil and sugar. Add eggs and mix well. In a large bowl, combine flour, baking soda, salt, and cinnamon. Gradually add the egg mixture and bananas. Stir in carrots and pecans.

 

Pour into a greased loaf pan. Bake at 350 degrees for 55 to 65 minutes or until a toothpick inserted in the center comes out clean.

 

Let cool in pan 10 minutes. Turn loaf onto a wire rack to cool completely.
