Chunky Peach Spread

 

7 medium peaches (about 2 lb.)

1/3 c. sugar

1 tbs. lemon juice

1 envelope unflavored gelatin

1/4 c. cold water

 

Drop peaches in boiling water for 1 minute or until peels are softened. Immediately dip peaches in ice water. Peel and chop peaches.

 

In a large saucepan, combine peaches, sugar, and lemon juice. Bring to a boil. Mash peaches. Reduce heat and simmer, uncovered, for 5 minutes.

 

Meanwhile, in a small bowl, sprinkle gelatin over cold water and set aside for 2 minutes. Remove peach mixture from heat and stir in gelatin mixture until dissolved. Cool for 10 minutes.

 

Pour into covered jars or other airtight containers. Refrigerate for up to 3 weeks.
