Broccoli Quiche

 

Pastry for 9-inch one-crust pie

10 oz. pkg. frozen chopped broccoli, thawed & well drained

1 1/2 c. shredded Monterey Jack cheese

1/4 c. finely chopped onion

1/2 tsp. dried basil

2 eggs, slightly beaten

1 c. milk

3 tbs. cornstarch

1/2 tsp. salt

1/8 tsp. pepper

 

Mix broccoli, cheese, onion, basil, salt, and pepper together in a large bowl. In a small bowl, blend milk and cornstarch until smooth. Stir in eggs until well blended. Pour over broccoli mixture and stir. Pour into crust.

 

Bake at 375 degrees for 45 minutes.
