Brunch Lasagna

A lovely choice for Easter!

 

1/2 c. butter

1/3 c. all-purpose flour

1/4 tsp. salt

Dash white pepper

3 c. milk

1/4 c. finely chopped green onions

1 tsp. lemon juice

1/4 tsp. hot pepper sauce

9 lasagna noodles, cooked & drained

2 c. fully cooked diced ham

10 oz. frozen chopped broccoli, thawed

1/2 c. grated Parmesan cheese

3 c. shredded cheddar cheese

4 hard cooked eggs, finely chopped

 

To make white sauce, melt butter over medium heat in a saucepan. Stir in flour, salt, and pepper until smooth. Gradually add milk. Bring to a boil. Cook and stir 2 minutes or until thickened. Remove from heat and stir in onions, lemon juice, and hot pepper sauce.

 

Spread 1/4 of white sauce in a greased 13x9x2-inch baking dish. Layer with 3 noodles, half the ham, half the broccoli, 3 tbs. Parmesan cheese, 1 c. cheddar cheese, half the eggs, and 1/4 of white sauce. Repeat layers. Top with remaining noodles, white sauce, and cheeses.

 

Bake at 350 degrees for 40 to 45 minutes or until bubbly. Let stand 15 minutes before cutting.
