Hearty Egg Scramble

 

3/4 c. diced peeled potatoes

1/4 c. chopped red pepper

1/4 c. chopped green pepper

1/4 c. chopped onion

1 tsp. vegetable oil

1 c. cooked cubed ham

8 eggs

1/3 c. sour cream

1/4 c. milk

1/4 tsp. salt

1/8 tsp. pepper

1 c. shredded cheddar cheese

 

Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat. Cover and simmer for 10 to 15 minutes or until tender. Drain.

 

In a large skillet, sauté peppers and onion in oil until tender. Add ham and potatoes, and sauté 2-3 minutes more.

 

Meanwhile, in a large bowl, whisk together the eggs, sour cream, milk, salt, and pepper. Pour over mixture in skillet. Cook and stir over medium heat until eggs are completely set. Sprinkle with cheese.

 

Makes 5 servings.
