Hearty Man’s Quiche Unbaked 9-inch pie crust 9 oz. pork sausage 4 hard-boiled eggs, chopped 1 c. (4 oz.) Swiss cheese, shredded 1 c. (4 oz.) cheddar cheese, shredded 3 eggs, beaten 1 1/2 c. cream or half-and-half 1/2 tsp. salt 1/2 tsp. coarsely ground black pepper Preheat oven to 350 degrees. Bake pie shell for 7 minutes. In a medium skillet, fry sausage until browned. Drain well. Spread the hard-boiled eggs in bottom of pie shell. Top with sausage and cheeses. In a small bowl, combine eggs, cream, salt, and pepper. Pour over cheese mixture. Bake for 30 to 35 minutes or until set like a custard. Let stand 5 minutes before serving. Serves 6
