Spinach Quiche

 

Pastry for 9-inch one-crust pie

4 eggs, slightly beaten

1 1/2 c. milk

1 c. shredded Swiss cheese

1 pkg. dry vegetable soup mix, such as Knorr

10 oz. pkg. frozen chopped spinach, thawed & squeezed dry

 

Combine eggs, milk, cheese, soup mix, and spinach in a large bowl. Spoon into crust.

 

Bake at 375 degrees for 50 minutes.
