Stuffin’ Egg Muffins 1 pkg. Stove Top Stuffing Mix for Chicken 12 eggs 3 tbs. bacon bits 1/2 c. shredded Colby or cheddar cheese Preheat oven to 400 degrees. Spray 12 muffin cups with nonstick spray. Prepare stuffing mix as directed on package. Press 1/4 c. stuffing firmly into the bottom and up the sides of each muffin cup, forming about a 1-4-inch rim around the top of the cup. Crack 1 egg into each cup. Sprinkle with bacon bits and cheese. Bake for 20 minutes or until yolks are set. Let stand 5 minutes before serving. 12 servings
