Western Omelet Casserole An easy crockpot dish – but you may have to be up early to start it! 30 oz. bag frozen hash potatoes 1 lb. cubed cooked ham 1 medium onion, diced 1 1/2 c. shredded cheddar cheese 12 eggs 1 c. milk 1 tsp. salt 1 tsp. pepper Layer one third each of potatoes, ham, onions, and cheese in the bottom of a slow cooker. Repeat layers two times. Beat together eggs, milk, salt, and pepper. Pour over contents of slow cooker. Cover and cook on low 8 to 9 hours.
