Zucchini Quiche Pastry for 9-inch one-crust pie 2 c. finely chopped zucchini 1 medium onion, finely chopped 1/4 c. water 3 beaten eggs 8 oz. plain yogurt 1 1/2 c. shredded Swiss cheese 2 tbs. flour 1/2 tsp. dried dill weed 1/4 tsp. salt Dash pepper Bake crust at 450 degrees for 5 to 7 minutes or until edges are light brown. Combine zucchini, onion, and water in a saucepan and simmer until tender. Drain well. In a bowl, combine eggs, yogurt, cheese, flour, dill weed, salt, and pepper. Stir in vegetables. Pour mixture into crust. Bake at 350 degrees for 25 to 30 minutes. Cool for 10 minutes before serving.
