Healthnut Pancakes

 

2/3 c. whole wheat flour

3/4 c. all-purpose flour OR 1/2 c. wheat germ

1 c. all-purpose flour

1 tbs. sugar

1/2 tsp. salt

1 1/2 tsp. baking powder

1 egg, well beaten

1 c. milk

 

In a medium bowl, combine all-purpose flour and whole wheat flour (or wheat germ) with sugar, salt, and baking powder. Combine egg and milk in a separate, small bowl, then beat into dry ingredients. Continue beating until batter is smooth. Use about 1/4 cup for each pancake. Cook on a lightly greased griddle.

 

4 to 6 servings
