Chunky Applesauce 8 c. chopped, peeled tart cooking apples (about 3 1/2 lbs.)* 1/2 c. packed brown sugar 2 tsp. vanilla extract 1 tsp. ground cinnamon In a Dutch oven, combine all the ingredients. Cover and cook over medium-low heat for 30 to 40 minutes or until apples are tender, stirring occasionally. Remove pan from heat. Mash the apples with a potato masher until sauce is the desired consistency. Serve warm or cold. *Granny Smith, Jonathan, & McIntosh are good varieties.
