Breakfast Cookies

 

1/2 c. unsalted butter, softened

1 c. firmly packed dark brown sugar

2 large eggs

3/4 c. canola oil

2 tsp. vanilla extract

1 c. Grape Nuts cereal

1/2 c. peanut butter

2 1/4 c. white flour

1 tsp. baking powder

1 tsp. baking soda

3/4 tsp. salt

2 tbs. wheat germ

2 tbs. ground flax seeds

1/3 c. nonfat dry milk powder

1 c. raisins

 

Preheat oven to 350 degrees. Cream together the butter and sugar. Add the eggs, oil, and vanilla, and mix to blend. Stir in the remaining ingredients. Form dough into balls 1 inch in diameter. Place on ungreased 10x15-inch cookie sheets and flatten with a fork. Bake for about 12 minutes on a baking rack positioned in the middle of the oven. Remove from oven and let cool.
