Fried Green Tomatoes 3 medium, firm green tomatoes 3 tbs. all-purpose flour 1/2 tsp. salt 1 1/4 tsp. coarsely ground black pepper 4 tbs. butter Wash tomatoes and slice 1/2-inch thick; pat dry with paper towels. In a small bowl, mix together the flour, salt, and pepper. Melt butter in a heavy skillet. Dip tomatoes into flour mixture and place in single layer in butter. Cover pan, reduce heat, and cook for 10 minutes. Remove cover, increase heat, and brown the slices on both sides. Drain on paper towels. Serve hot. 4 servings
