Special Baked Oatmeal

 

2 eggs

1/2 c. vegetable oil

1/3 c. packed brown sugar

3 c. old-fashioned oats

3 tsp. baking powder

1 tsp. salt

3/4 tsp. ground cinnamon

1/3 c. flaked coconut

1/3 c. raisins

1/3 c. semisweet chocolate chips

 

In a large bowl, combine eggs, oil, and brown sugar. In a separate bowl, combine oats, baking powder, salt, and cinnamon. Add to the egg mixture, stirring until just moistened. Stir in the coconut, raisins, and chocolate chips.

 

Spoon into a greased 13x9x2-inch baking dish. Bake at 350 degrees for 20 to 25 minutes or until edges are golden brown.

 

Serve warm with milk, if desired.
