Spinach Pancakes

 

10 oz. pkg. frozen chopped spinach, thawed & drained

1 small onion, finely chopped

8 eggs, beaten

1/2 c. crumbled Feta cheese

1/4 c. sour cream, optional

Vegetable oil for frying

 

Mix spinach, onion, and eggs in a large bowl. Heat oil in a large skillet over medium heat. Use about 1/4 c. spinach mixture per pancake. Cook until lightly browned, then turn over. When second side is almost browned, sprinkle 1 tbs. cheese on each. Remove when cheese is melted.

 

Top with sour cream, if desired.
