Muffin Recipes
Blueberry Muffins Ingredients: 1 c. blueberries 2 c. flour 1/3 c. sugar 1 Tbs. baking powder 1/2 tsp. salt 2 large eggs 2/3 c. milk 1/4 c. butter, melted Preparation: Heat oven to 400°F. Grease 12 muffin cups. In a small bowl, toss blueberries with 1 c. flour. In a large bowl, combine remaining flour, sugar, baking powder, and salt. In a second small bowl, beat eggs, milk, and butter together. Stir milk mixture into flour mixture until just blended. Fold in blueberries. Fill each muffin cup 2/3 full. Bake 15-18 minutes or until lightly browned. Makes 12 muffins. Apple Nut Muffins Ingredients: 1 1/4 c. all-purpose flour 1/2 c. whole wheat flour 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 c. chopped walnuts 1/4 c. butter 2/3 c. brown sugar 2 large eggs 1 c. milk 1 large apple – peeled, cored, and chopped Preparation: Heat oven to 400°F. Grease 12 muffin cups. In a large bowl, mix flours, baking powder, baking soda, salt, and cinnamon. In a small bowl, cream butter and brown sugar together until fluffy. Beat in eggs, then milk, and blend well. Stir milk mixture into flour mixture until just blended. Quickly fold in apples and nuts. Fill each muffin cup 2/3 full. Bake 18-20 minutes or until lightly browned. Makes 12 muffins.
