Apple Nut Muffins

 

1 1/4 c. all-purpose flour

1/2 c. whole wheat flour

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/2 c. chopped walnuts

1/4 c. butter

2/3 c. brown sugar

2 large eggs

1 c. milk

1 large apple, peeled, cored, and chopped

 

Heat oven to 400 degrees. Grease 12 muffin cups. In a large bowl, mix flours, baking powder, baking soda, salt, and cinnamon. In a small bowl, cream butter and brown sugar together until fluffy. Beat in eggs, then milk, and blend well. Stir milk mixture into flour mixture until just blended. Quickly fold in apples and nuts.

 

Fill each muffin cup 2/3 full. Bake 18 to 20 minutes or until lightly browned.
