Applesauce Muffins

 

1/2 c. butter, softened

1 c. sugar, divided

2 eggs

3/4 c. applesauce

1 3/4 c. all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

1/4 tsp. cinnamon

4 tbs. butter, melted

 

Preheat oven to 425 degrees. Grease 36 mini muffin cups.

 

Beat together 1/2 c. butter and 1/2 c. sugar in a large bowl. Beat in eggs, one at a time, until fluffy. Beat in applesauce.

 

In a separate bowl, combine flour, baking powder, and salt. Add to butter mixture and stir just to moisten. Fill muffin cups 2/3 full.

 

Bake 15 minutes or until golden brown.

 

Combine remaining 1/2 c. sugar and cinnamon. Dip tops of warm muffins into melted butter and then into the cinnamon sugar. Serve warm.
