Bacon Cheddar Muffins

 

1 3/4 c. flour

1/4 c. sugar

2 tsp. baking powder

1/4 tsp. salt

1/4 tsp. cayenne pepper

1/2 c. shredded sharp cheddar cheese

1 beaten egg

3/4 c. milk

1/3 c. vegetable oil

6 strips bacon, cooked crisp, drained, and crumbled

 

Preheat oven to 400 degrees. Grease cups and top of a 12-cup muffin pan or spray it with nonstick coating. Set pan aside.

 

Stir together flour, sugar, baking powder, salt, pepper, and cheese in a large bowl. In a separate bowl, combine egg, milk, and oil. Add egg mixture to flour mixture and stir until just moistened. Fold in the bacon.

 

Fill muffin cups to the top. Bake for 20 to 25 minutes. Serve warm.
