Blueberry Muffins

 

1 c. blueberries

2 c. flour

1/3 c. sugar

1 Tbs. baking powder

1/2 tsp. salt

2 large eggs

2/3 c. milk

1/4 c. butter, melted

 

Heat oven to 400 degrees. Grease 12 muffin cups. In a small bowl, toss blueberries with 1 c. flour. In a large bowl, combine remaining flour, sugar, baking powder, and salt. In a second small bowl, beat eggs, milk, and butter together. Stir milk mixture into flour mixture until just blended. Fold in blueberries.

 

Fill each muffin cup 2/3 full. Bake 15 to 18 minutes or until lightly browned.
