Chocolate Chip Muffins 2 c. all-purpose flour 1/2 c. sugar 1/4 c. instant nonfat dry milk powder 1 tsp. baking powder 1 tsp. salt 4 large eggs 1/2 c. vegetable oil 14 c. butter, melted 1/2 tsp. vanilla extract 1 1/2 c. semisweet chocolate chips Heat oven to 400 degrees. Grease 8 to 10 muffin cups. In a large bowl, mix flour, sugar, milk, baking powder, and salt. In a separate bowl, beat eggs, oil, butter, and vanilla together. Stir egg mixture into flour mixture until just blended. Quickly fold in chocolate chips. Spoon batter into muffin cups. Bake 18 to 20 minutes or until lightly browned. 8 to 10 muffins
