Ham Corn Muffins

 

1 pkg. (8 1/2 oz.) cornbread & muffin mix

1/8 tsp. ground mustard

1/3 c. milk

1 tbs. vegetable oil

1 egg

1 c. chopped fully cooked ham

1/4 c. thinly sliced green onions

2 tbs. shredded cheddar cheese

 

In a bowl, combine cornbread mix, mustard, milk, oil, and egg just until blended. Stir in the ham and onions.

 

Fill greased or paper-lined muffin cups half full. Bake at 400 degrees for 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Immediately sprinkle with cheese.

 

Cool for 5 minutes before removing from pan. Serve warm.
