Peanut Butter Banana Muffins

 

Batter:

1 c. flour

3/4 c. oats

1/3 c. brown sugar

1 tbs. baking powder

1 c. milk

12 c. peanut butter

1/2 c. mashed ripe banana

1 egg, beaten

2 tbs. vegetable oil

1 tsp. vanilla

 

Topping:

1/4 c. oats

1/4 c. flour

2 tbs. butter, melted

2 tbs. brown sugar

 

Heat oven to 375 degrees. Grease 12 muffin cups.

 

Combine flour, oats, brown sugar, and baking powder in a large bowl. In a separate bowl, whisk together milk, peanut butter, bananas, egg, oil, and vanilla. Add to dry ingredients and mix until just moistened.

 

Fill muffin cups 3/4 full. Combine topping ingredients and sprinkle evenly over batter. Bake 16 to 18 minutes or until golden brown.
