Pineapple Muffins 2 c. all-purpose flour 2 c. sugar 1 tsp. baking soda 1 tsp. baking powder 2 8-oz. cans crushed pineapple, undrained 2 eggs 1/2 c. vegetable oil In a large bowl, combine flour, sugar, baking soda, and baking powder. In a separate bowl, mix the pineapple, eggs, and oil. Stir pineapple mixture into the dry ingredients until just moistened. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20 to 25 minutes or until a toothpick comes out clean. Cool in pan for 10 minutes, then remove to a wire rack. About 20 muffins
