Wine & Cheese Muffins Delicious served with wine and light foods such as fish and salads that don’t hide the delicate flavors. 2 c. baking mix 3/4 c. white wine or apple juice 2 tbs. vegetable oil 1 egg 1 c. shredded Swiss, Gruyere, or Cheddar cheese (4 oz.) 2 tsp. chopped fresh or freeze-dried chives Heat oven to 400 degrees. Grease 12 medium muffin cups generously or use paper liners. Mix baking mix, wine, oil, and egg with fork until blended. Stir in remaining ingredients. Divide batter evenly among cups. Bake about 20 minutes or until golden brown. 12 muffins
