Cilantro-Garlic Potatoes 2 tbs. extra virgin olive oil 1/3 c. diced red onion 1/4 c. cooked and crumbled bacon 1 bag (16-ounce) precooked and diced red potatoes 1/2 tsp. minced garlic Salt and pepper to taste 1/4 c. chopped fresh cilantro In a large skillet, heat oil over medium-high heat. Add red onion and bacon pieces. Cook and stir until onion is soft, about 2 to 3 minutes. Add potatoes and garlic. Cook 5 to 7 minutes, stirring occasionally. Season to taste with salt and pepper. Stir in cilantro and serve hot.
