Country Potatoes 2 large baking potatoes 1 tsp. salt, divided 2 tbs. butter 4 green onions, chopped 1/2 c. cooked ham, chopped 1/2 tsp. garlic, minced 1/2 c. fresh mushrooms, washed and thinly sliced 1/2 tsp. salt 1/4 tsp. black pepper Boil the potatoes in salted water until tender. Drain, peel, and coarsely chop. In a large heavy skillet, melt butter and add in potatoes. Cook over medium heat for 5 to 7 minutes, stirring occasionally until browned. Add in onions, ham, garlic, and mushrooms and continue cooking for 2 minutes longer. Season with salt and pepper and serve hot. 4 servings
