Sweet Treats to Add Pizazz to Your Brunch

Dessert isn't necessary, of course, but you may put a smile on your guests' faces by including one! Choose a hot cobbler or a cool cheesecake to round out your menu.

Chocolate Chip Cheese Ball
Triple Citrus Cheesecake

Chocolate Chip Cheese Ball


8 oz. cream cheese, softened
1/2 c. butter
1/4 tsp. vanilla extract
3/4 c. confectioners' sugar
2 tbs. brown sugar
3/4 c. miniature semisweet chocolate chips
3/4 c. finely chopped pecans
Graham crackers

1. In a large bowl, beat cream cheese, butter, and vanilla until fluffy. Gradually add sugars and beat until just combined. Stir in chocolate chips.
2. 
Cover and refrigerate for 2 hours.
3. Place chilled mixture on a large piece of plastic wrap and shape it into a ball. Refrigerate for at least 1 hour.
4. Just before serving, roll ball in pecans.
5. Serve with graham crackers.



Triple Citrus Cheesecake

Crust:
1 c. graham cracker crumbs
1/3 c. brown sugar
1/4 c. butter, softened

Filling:
4 8-oz. pkgs. cream cheese, softened
1 c. sugar
2 tbs. flour
1 tsp. vanilla
1 tbs. each fresh lemon, lime, & orange juice
1 tsp. each grated lemon, lime, & orange peel
4 eggs

1. Preheat oven to 325 degrees. (Use 300 degrees for a dark nonstick pan.)
2. 
Combine crust 
ingredients and press into bottom of a 9-inch springform pan. Bake for 10 minutes.
3. In a bowl, 
mix cream cheese, sugar, flour, and vanilla until well blended. Blend in juices and peels. Add eggs, one at a time, until just blended. Pour filling over crust.
4. Bake for 
60 to 65 minutes or until the center is almost set. Carefully run a knife around the edge of the pan to loosen the cheesecake. Remove the side of the pan.
5. Refrigerate 
4 hours or overnight before serving.
