Whether Sweet or Savory, These Are a Brunch Favorite

Muffins are a great choice for a brunch. Most recipes are easy and can be made ahead, giving you more time to concentrate on the rest of your menu. Choose a fruity variety like Applesauce Muffins, or wow your guests with something new, such as Wine & Cheese Muffins.

And don't forget scones. They may require a little more work but are worth the effort.

Applesauce Muffins Mocha Chocolate Chip Scones
Bacon Cheddar Muffins Wine & Cheese Muffins
Chocolate Chip Muffins

Applesauce Muffins
Makes 36 mini muffins

1/2 c. butter, softened
1 c. sugar, divided
2 eggs
3/4 c. applesauce
1 3/4 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
4 tbs. butter, melted

1. Preheat oven to 425 degrees. Grease 36 mini muffin cups.
2. Beat together 
1/2 c. butter and 1/2 c. sugar in a large bowl. Beat in eggs, one at a time, until fluffy. Beat in applesauce.
3. In a separate bowl, 
combine flour, baking powder, and salt. Add to butter mixture and stir just to moisten. Fill muffin cups 2/3 full.
4. Bake for 15 minutes or until golden brown.
5. Combine remaining
1/2 c. sugar and cinnamon. Dip tops of warm muffins into melted butter and then into the cinnamon sugar. Serve warm.


Bacon Cheddar Muffins

1 3/4 c. flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cayenne pepper
1/2 c. shredded sharp cheddar cheese
1 beaten egg
3/4 c. milk
1/3 c. vegetable oil
6 slices bacon, cooked crisp, drained, & crumbled

1. Preheat oven to 400 degrees. Grease cups and top of a 12-cup muffin pan.
2. Stir together 
flour, sugar, baking powder, salt, pepper, and cheese in a large bowl. In a separate bowl, combine egg, milk, and oil.
3. Add egg mixture to the flour mixture and stir until just
moistened. Fold in the bacon.
4. Fill muffin cups to the top and bake for 20 to 25 minutes.
5. 
Serve warm.


Chocolate Chip Muffins
Makes 8-10 muffins


2 c. all-purpose flour
1/2 c. sugar
1/4 c. instant nonfat dry milk powder
1 tsp. baking powder
1 tsp. salt
4 large eggs
1/2 c. vegetable oil
1/4 c. butter, melted
1/2 tsp. vanilla extract
1 1/2 c. semisweet chocolate chips

1. Preheat oven to 400 degrees. Grease 8 to 10 muffin cups.
2. In a large bowl, mix the flour, sugar, milk powder, baking powder, and salt. 
3. In a separate bowl, beat the eggs, oil, butter, and vanilla together.
4. Stir egg mixture into the flour mixture until just blended. Quickly fold in the chocolate chips.
5. Spoon batter into the muffin cups.
Bake 18 to 20 minutes or until lightly browned.


Mocha Chocolate Chip Scones
Makes 12 servings


1/4 c. double strength coffee, cooled
3 tbs. heavy cream, divided
2 large eggs
1 tsp. vanilla
3 1/2 c. baking mix
1/2 c. sugar
3/4 c. chopped dark chocolate candy bars
3/4 c. semisweet chocolate chips
White decorating sugar or sanding sugar

1. Preheat oven to 350 degrees.
2. 
In a small bowl, beat 1 egg. Add coffee, 2 tbs. cream, egg, and vanilla. Stir to combine and set aside.
3. In a large bowl, combine
baking mix, sugar, dark chocolate, and chocolate chips. Add coffee mixture and work into a crumbly dough. 
4.
 On 
a lightly floured surface, form dough into a 9-inch disk about 1/2 inch thick. Cut the disk into 12 wedges and place them on an ungreased baking sheet.
5. In a small bowl, combine the second egg and 1 tbs. cream. Brush tops of scones with the egg mixture and sprinkle with decorating sugar.
6. Bake for 15 to 18 minutes or until golden brown.
Serve warm with butter.


Wine & Cheese Muffins
Delicious served with wine and light foods such as fish and salads that don't hide the delicate flavors
Makes 12 muffins


2 c. baking mix
3/4 c. white wine or apple juice
2 tbs. vegetable oil
1 egg
1 c. shredded Swiss, Gruyere, or Cheddar cheese
2 tsp. chopped fresh or freeze-dried chives

1. Preheat oven to 400 degrees. Generously grease 12 muffin cups.
2. 
In a bowl, mix baking mix, wine, oil, and egg with a fork until just blended. Stir in the remaining ingredients.
3. Divide batter evenly among the muffin cups.
 
4.
 Bake about 20 
minutes or until golden brown.
