Crunchy Turkey Salad

 

1/4 c. mayonnaise

1/4 c. chopped green onion

1/4 c. finely chopped celery

1/4 c. grated carrot

2 tbs. dried cranberries

2 c. chopped cooked turkey

 

 

Grease a 9x13-inch baking dish. Set aside.

 

Mix together mayonnaise, onion, celery, carrot, and cranberries in a large bowl. Add turkey and mix lightly. Cover and refrigerate at least 30 minutes.

 

Variation:

For added flavor and texture, add 1 tbs. Dijon mustard and 1/4 c. chopped water chestnuts before adding turkey.
