Egg Salad Sandwiches 4 large eggs, hard boiled and cooled 6 tbs. mayonnaise 3 tbs. toasted walnuts, coarsely chopped 1/2 tsp. Dijon-style mustard or white vinegar 1/4 tsp. salt Freshly ground black pepper 6 slices multigrain bread Thinly sliced red onions Lettuce Remove the shells from the boiled eggs and mash the eggs with a fork. Add mayonnaise, walnuts, mustard, salt, and pepper. Mix well and adjust for seasoning. Spread additional mayonnaise on the bread, and make sandwiches with the salad, onions, and lettuce. 3 sandwiches
