Tomato Mozzarella Salad 1 pint cherry tomatoes, halved 1/4 c. red wine vinegar 1 garlic clove, minced 1/2 tsp. salt Pepper to taste 2/3 c. olive oil 1 1/2 c. cubed mozzarella cheese 1/4 c. chopped onion 3 tbs. minced fresh basil Whisk together vinegar, garlic, salt, pepper, and oil until well blended. Add tomatoes, cheese, onion, and basil. Toss to coat. Cover and chill at least 1 hour. Stir before serving.
