Breakfast Butters

Great on toast, scones, pancakes, waffles, etc.!

 

Honey:

1/2 c. unsalted butter

3 Tbs. honey

1/4 tsp. vanilla extract

 

Cinnamon Sugar:

1/2 c. unsalted butter

1 tsp. ground cinnamon

2 Tbs. light brown sugar

 

Fruit:

1/2 c. unsalted butter

2 tsp. good quality jam or preserves – NOT JELLY

 

Bring butter to room temperature. Place all ingredients in a bowl and mash with a fork to combine. Serve immediately or cover and refrigerate for up to 3 days.

 

 

Omelet Biscuit Cups

 

Ingredients:

1 tube (12 oz.) large refrigerated buttermilk biscuits

4 eggs

1/4 c. milk

1/8 tsp. salt

1/8 tsp. pepper

1 c. diced cooked ham

3/4 c. shredded cheddar cheese, divided

1/3 c. chopped canned mushrooms

1 Tbs. butter

 

Preparation:

Press biscuits onto the bottom and up the sides of greased muffin cups. Set aside. In a large bowl, beat the eggs, milk, salt, and pepper together. Add ham, 1/4 c. cheese, and mushrooms. Mix well. Melt the butter in a skillet and add the egg mixture. Cook and stir it until the eggs are nearly set. Spoon the egg filling into the biscuit cups.

 

Bake at 375°F for 10-15 minutes or until biscuits are golden brown. Sprinkle with remaining cheese. Bake 2 minutes longer or until cheese is melted.

 

 

Easy Country Sausage

 

Ingredients:

2 lbs. ground pork (75% lean)

2 tsp. salt

2 tsp. sage

1/2 tsp. brown sugar

1/2 tsp. cayenne pepper

1 1/2 tsp. pepper

 

Preparation:

Mix all ingredients in a bowl. Shape into 8 4-inch patties. Cook for 5 minutes per side or until browned.

 

Makes 8 patties.

 

 

Hashbrown Potato Casserole

 

Ingredients:

30 oz. frozen hashbrown-style potatoes

2 c. shredded cheddar cheese

1/2 c. chopped onion

1/2 c. butter

16 oz. sour cream

1 tsp. salt

1/4 tsp. pepper

 

Preparation:

Melt butter in a saucepan over low heat. Add cheese and stir until melted. Remove from heat. In a large bowl, mix sour cream, onion, salt, and pepper. Add butter and cheese mixture. Mix in potatoes. Spread in a large greased casserole dish. Dot the top slightly with additional butter if desired. Bake at 350°F for 30 minutes.
